| The health benefits of olives and olive oils have been known for thousands of years. They are high in antioxidants and free of cholesterol, and are the basic building block of the so-called Mediterranean diet Our property has an extensive planting of more than 2000 olive trees that range in age up to 18 years. We also source olives from a number of quality producers in the Hunter Valley. From our grove we produce a variety of different table olives, tapenades and olive oils at our own olive processing facility. Because we process on site, we can capture the beautiful full flavours of the olives in our olive products. When it comes to olives and olive oils, there is no doubt that "fresh is best". The key products we produce and sell on our property are: OLIVE OILS . Mild blend - a fragrant grassy oil with no bitterness or pepperiness. Ideal for mayonnaise or blending with vinegars . Peppery and Robust blends - more spicy versions. Ideal with stronger flavours such as tomato and basil . Super fresh unfiltered oils - by special arrangement and only available immediately after harvest, these oils are straight from the press! . Infused oils - These are more exotic offerings to complement different foods. Our most popular blends feature garlic, herbs, chilli and lemon myrtle. For a truly scrumptious taste anytime, try some warm crispy bread dipped in our farm fresh olive oil - beautiful! And if you want to add a little extra, try dipping the bread in some of our fabulous dukkah. Incredible. All of these oils are available for tasting and sale at our cellar door and you can order them at our on-line shop. TABLE OLIVES There are many different varieties and styles of table olives, from natural to some including chilli, lemon and garlic combinations. The main varieties we use include Manzanillo, Kalamata, Sevillano, California Queen, Verdale, Hardy's Mammoth, Coratina and Frantoio. We use the traditional method to cure our table olives in a brine solution. This process takes up to 12 months to perfect the olives. We do not use any chemicals or caustic soda in the process, because we believe this is the best way to ensure the best flavour and texture. TAPENADES Originally from Provence, Olive Tapenade is a delicious way to enjoy all the flavour and goodness of olives. It is now very popular in Australia as well. Olive tapenade is a blend of cured olive paste and a variety of other ingredients such as herbs and spices, anchovy, garlic, lemon and capers. It is often served as an appetiser on crusty bread, biscuits or toast or used as an accompaniment to a wide range of other foods. It adds a touch of class to stews, casseroles and lamb dishes. Our tapenade offerings include the traditional anchovy and spice recipe as well as newer styles such as a vegetarian version, one with chilli and others with coriander and lime.
